Citrus juice filter

This is a DIY juice filter for large capacity filtration. It is used for making whole citrus drinks and can be used as an infuser and for other culinary uses such as fruit jellies.

The juice filter and infuser

The juice filter and infuser is made from pantyhose legs. I tie a knot in one end to seal off one end. “Now, just before you get the wrong idea, these are would be pantyhose legs only that are factory rejects. So they have never been on a leg or anywhere else.” The stretchy fine knitted nylon fabric makes an excellent filter and infuser material for culinary uses.

When stretched over the mouth of a large cereal storage container and clipped in place by the lid it makes an excellent slow and hygienic filter device. It traps fibrous matter within the fabric and the juice can move through. The juice and fibre can be left in contact within the closed container for some time so that it can act as an infuser for extra flavours.

The top of the filter sock can be gathered together and clipped under the lid so that it is held away from the pourer opening. The canister can be sealed if a long diffusion and or drainage period is required and this can be done in a refrigerator. The retained blob of the pulp can be lifted up above the filtered liquid when required as its size reduces.

Jungle juice made with the juice filter

As an example, my main use for the juice filter is for making citrus jungle juice from whole pulped home-grown citrus fruit. Sugar is dissolved in boiling water at the bottom of the container. Then the pulped citrus can be poured in through the big hole shown in the photo above. As more liquid filtered through, the filter can be gathered up and lifted to make more liquid filter through. The contact time between the liquid drink and the pulp can be arranged to give more or less citrus zest tang to the drink.

Eventually, a small pudding shaped ball of citrus fibre is all that will left in the filter as it progressively is lifted up above the juice. The majority of the pulp will become jungle juice. It gets delightfully zesty as the filtration/infusion progresses.

Limiting the infusion time can easily produce a lighter drink. With this device, with a single batch, it is easy to pour off a light juice fraction early. Then later a very strong drink from the last fraction can be made. All tastes can be accommodated.
