Wholemeal pikelets

These wholemeal pikelet are simple to make and taste so good that the eater will not realize that they are eating wholemeal food that is so good for them.

Recipe

  • 2/3 cup of wholemeal flour,
  • 1/3 cup of self-raising flour,
  • 1/4 cup of vanilla custard powder,
  • 1 egg and
  • milk as required.

Mix all together, with a rubber spatula, in a bowl that is suitable for pouring. Use insufficient milk so that the mix is stiff and easy to eliminate any lumps, then add more milk to make a thick creamy texture.

Pour little blobs of batter into a hot pan (preferably non-stick) that is coated with a little olive oil. Flip pikelets when the little wet patch in the middle just disappears.

I use a silicon rubber spatula for mixing as it works just as well as a fork and it is also excellent for controlling the dispensing of the pikelets and scraping the last pikelets from the bowl. “The fewer the tools and the fewer the items to wash up.”
